Zucchini Three Ways!

Описание: Zucchini is such an abundant and tasty vegetable, yet too often it's a bit bland when served. These preparations are all simple and chock full of flavor. Time to take advantage of this readily available - and economical - summer vegetable. Buon Gusto!

Zucchini with Anchovies and Capers - The anchovies provide much of the flavor here, but. if you are apprehensive about anchovies, cut the amount in half. For extra spice, add crushed red pepper as well. Serve this hot, as an appetizer or a side dish, or prepare it in advance and serve at room temperature. It’s delicious either way (and thus an excellent buffet item). The savory zucchini makes a great pasta sauce, too—simply toss with hot drained ziti (or other short hollow pasta) and top with grated cheese.

Zucchini Roll-Ups - This is a picnic favorite: the bite-size rolls are perfect to pop into your mouth at room temperature. Zucchini is readily available and affordable, especially in the summertime, and when prepared with a little imagination, as in this dish, it is delicious and festive-looking. I literally grew up on zucchini prepared this way— sliced into thin strips, dipped in egg, and fried. It was one of my favorite vegetables when I was little, and my mother often made our school lunch sandwiches with these strips.

Sweet and Sour Zucchini - This delicous dish is super simple and versatile, especially in the summer. You can serve them on sandwiches or as a side dish to to chicken or grilled foods. The flavors of sweet and sour pair perfectly with the freshness of the zucchini, making this dish ideal for picnics and weekend get togethers.
