500g Leeks
2 tbsp Butter
3 Garlic Cloves
Salt to Taste

For The Cheese Sauce:
2 tbsp Butter
2 tbsp Plain Flour
200ml Whole Milk
270ml Double Cream
1 tsp Dijon Mustard
75g Mature Cheddar
Salt To Taste
Pepper to Taste
