Preparation Time : 15 mins
Cooking Time - 20 to 30 mins
Serves - 4 to 5
Ingredients:
Brinjal - 2 medium size chopped
Drumsticks - 1 cut into long pieces & Slit
Onion - 1 chopped
Tomato - 1 chopped
Sambar Powder - 1 to 2 tblspn
Turmeric Powder / Manjal podi - 1 tsp
Salt to taste
Jaggery - 1 tsp or to taste
Tamarind Pulp - 3 tblspn
For Grinding:
Coconut - 1/2 cup
Onion - 1 chopped
For Seasoning:
Oil - 3 tblspn
Mustard Seeds / Kaduku - 1 tsp
Cumin Seeds / Jeerakam - 1 tsp
Fenugreek Seeds / Vendayam - 1/2 tsp
Urad dal / Ulundam paruppu - 1 tsp
Dry Red Chilli - 2
Curry leaves - 1 spring
Method:
Soak Tamarind in water for 10 mins. Squeeze it with your hands and strain it.
Take Coconut and Onion in a blender and make into a fine puree.
Heat oil in a kadai or pot. Add all the seasoning ingredients and saute for few seconds.
Now add in onions and saute for a couple of minutes.
Add tomatoes in and mix well for couple of mins.
Now add in the turmeric and sambar powder and mix well.
Pour the tamarind juice in and mix well Add more water as needed and bring it to a boil.
Now add in the brinjal and drumstick and cover it with a lid. Let it cook for 10 mins.
Now add in the coconut masala and mix well. Cover again and cook for 10-15 mins.
Once it is cooked, serve with rice.
