This is my from-scratch chicken tikka masala, and serving it over a roasted white sweet potato instead of rice was genuinely one of the best decisions I’ve made in the kitchen in a while. The flavors together are unreal — rich, spiced, comforting, but not heavy.
Chicken Tikka Masala (my way):
Marinade
• 1 cup yogurt (dahi)
• 2 tbsp ginger-garlic
• Juice of ½ lemon
• 2 tsp Kashmiri chili powder
• 1 heaping tbsp garam masala
• 2 tsp salt
• 2 tsp black pepper
• ~3 lb chicken (bone-in = more flavor)
Marinate at least 30 minutes (overnight is best).
Masala
• 2 onions, diced
• 2 tbsp ginger-garlic
• 2 tbsp garam masala
• 1 tbsp coriander
• 1 tbsp Kashmiri chili powder
• 1 can diced tomatoes
• 1 can tomato sauce
• ~2 oz heavy cream (optional… but not really)
Brown the chicken, remove.
Cook onions until soft, add ginger-garlic and spices.
Add tomatoes, simmer, then blend until smooth.
Stir in cream, add chicken back, and cook low and slow until everything is deeply flavorful.
Serve over basmati, with roti…
or do yourself a favor and try it over a roasted white sweet potato.
