How to Make & Preserve Strawberry Balsamic Jam!

Recipe:
8 cups diced Strawberries
7 cups of sugar
1 package of pectin
1/4 cup balsamic vinegar
2 Tbs fresh diced thyme
1/2 tsp unsalted butter
Mash or puree your strawberries. You can do with using a potato masher or your food processor.
Add strawberries, balsamic vinegar & thyme to a large pot on medium heat. Whisk in pectin & bring to a boil. As soon as the jam starts to boil add all of your sugar and pectin. Bring the mixture back up to a boil and hard boil for 1 minute. Remove from heat & add to your jars.
Canning Process:
Before making your jam, sterilize your jars in boiling water for 10 minutes. Leave your jars in hot water until you are ready to add your jam.
Add lids & all tools into a small pot of boiling water to sanitize them.
Remove one jar at a time & fill with jam using 1/4 - 1/2 of an inch of headspace. Put your sanitized lid on the jar, and tighten the lid until it is finger tight. Repeat the process until all of your jars are full. Put your jars back into boiling water and let them process for 10 minutes (or adjust based on altitude).
Let your jars sit for at least 12 hours before storing. Store jars in a cool dry place. Once you open a jar store it in the fridge!
