A Scottish Burns Night Supper - Part 2 - Vegetarian Haggis, Neeps & Tatties With A Whiskey Sauce

Welcome back friends to part 2 of A Burns Night Supper. In this video I am cooking a Vegetarian haggis, neeps (Carrots For Adam!) & tatties with a whiskey sauce.
Burns night is to celebrate the life and works of Robert Burns, a Scottish poet and songwriter from the 1700's.
A traditional haggis was made up of sheep's offal, oats, spices & suet encased in a sheep's stomach, it's generally not encased in a sheep's stomach now.
But I prefer our option of veggie haggis which we use in other recipes too. this is made up a blend of pulses, seeds, & veg with oats and spices.
I follow the instructions on the label to cook the haggis that I wrap in tin foil first.
whilst the haggis is cooking I give the veggies a good scrub as I will be using the peelings at a later date.
I prepare all the veg (Including Admas carrots) and cut them approximately the same size so they cook evenly.
Once cooked they all get mashed up with some seasonaings and a knob of butter and servcie with the whiskey sauce.
Whiskey Sauce Recipe:
Knob of butter
Approx 50 ml veg stock
100- 150ml Double Cream
4-6 tbspoons Whiskey(Depending on how strong you would like the flavour to be!)
1 teaspoon Mustard powder(Or what ever you have in the pantry)
Melt the butter in a sauce pan.
Add the whiskey
Add the veg stock and mustard & stir until blended
Gradually pour in the cream.
Keep stirring and reduce the sauce until the thickness you desire is achieved.
Either pour over the haggis, Neeps & Tatties or put in a warmed jug to serve.
If this is for a dinner party you can display the haggis, Neeps & Tatties in a stack with the sauce around the bottom. To achieve this it would be best to use a metal mold to hold it in place whist you "Stack" it.
But tonight we are going "Rustic" and will enjoy this just as it is with a very creamy Cranachan for dessert.
I think we might just be saving some of this for tomorrow!
