Ingredients
Dough
200g plain flour
115g milk
9g sugar
3g yeast
Mung bean filling
Mung beans, skin removed
Water
Rock sugar
Method
1. Rinse mung beans. Add water and rock sugar. Bring to boil over high heat, then reduce to low heat and simmer for about half an hour.
2. While cooking the mung beans, combine all dough ingredients in a bowl.
3. Knead into a dough ball. If it's not smooth, cover with plastic wrap and let prove for 10 minutes then knead again.
4. Cover with plastic wrap and continue to prove until doubled in size. About 2 hours depending on room temperature.
5. Once the filling is done, and cooled down. Measure out 8 portions of filling, weighing about 25 grams each.
6. Transfer dough onto a lightly floured working surface. Knead for a few minutes. Roll into a log. Cut into 8 portions.
7. Take each portion and roll into a circle with thinner edges and thicker at the centre by rolling from the edge towards the centre without rolling the centre.
8. Add a filling to the wrap. Wrap up like a bao. See video.
9. Transfer to steaming pot and let prove for about half an hour.
10. Steam over high heat for 20 minutes.
