Kinako Crepe Cake (ミルクレープ) 🍓
Ingredients:
For Crepes (makes 16):
2 cup @kingarthurbaking flour
4 eggs
2 cups milk
1/2 teaspoon @redmondrealsalt salt
1/4 cup @kerrygoldusa butter, melted
For Whipped Cream Filling:
1 cup heavy cream
2 teaspoons vanilla
1 1/2 tablespoons kinako
1/4 cup powdered sugar (plus more for dusting)
6-8 strawberries for topping
Instructions:
1. In a blender, blend all crepe ingredients until smooth.
2. Heat a greased medium-sized frying pan over medium-high heat. Pour 1/4 cup of batter onto pan and tilt to ensure even, circular spread.
3. Cook for ~1 minute or until top is dry and bottom is still the same color as the batter and hasn’t browned yet. Using a spatula, loosen the crepe and flip. Cook 1 more minute. Repeat for all crepes and place in fridge to completely cool.
4. For whipped cream filling, blend together ingredients until stiff.
5. Layer the cake, rotating between stacking a crepe and layering with a thin layer of the whipped cream.
6. Cover and refrigerate for at least 2 hours (or overnight).
7. Dust cake with powdered sugar and top with strawberries.
