Ingredients:
100 g Egg Wash
100 g Cake Flour
100 g Castor Sugar/Icing Sugar
100 g Butter
Instructions:
Place softened butter and sugar in the bowl of ZACME stand mixer. Using the silicone paddle attachment, mix on medium speed (setting 3) until the butter turns pale and fluffy. Gradually add the egg mixture in 12 portions, waiting each time until the butter fully absorbs the liquid to prevent curdling. Once the butter is fully whipped, sift in the flour and baking powder. Gently fold the dry ingredients into the batter using a motion from the center outward until just combined.Pour the batter into the prepared mold and smooth the surface.
Bake at 325°F (165°C)for 45 minutes until the top is evenly golden.
Allow the cake to cool completely, then wrap it tightly in plastic wrap and refrigerate overnight for better flavor.
