突然想吃港式叉燒!但在「亞洲調味料沙漠」義大利廚房怎麼辦?
找到香港祖哥的經典食譜(紅蔥頭、紅腐乳、沙薑粉、玫瑰露酒...),但現實是只能找到洋蔥、紅腐乳、蠔油這幾樣,於是我大膽調整:
Adele版叉燒醃料(義大利超市/中超可得):
洋蔥、蒜蓉、薑蓉、玉米澱粉、小蘇打粉、雞粉、五香粉、海鮮醬、紅腐乳、辣豆瓣醬、蠔油、白酒、生抽、蜂蜜
用舒肥機溫控烹煮(65°C x 18小時),最後氣炸鍋上色。結果?連同桌義大利人都忍不住續盤 bis!

Original: Red shallots, fermented tofu, sand ginger powder, rose dew wine...
Adele's reality: Onion, red bean curd, oyster sauce, and whatever else I could find!
My workable marinade:
Onion, garlic, ginger, cornstarch, baking soda, chicken powder, five-spice, seafood sauce, fermented red tofu, chili bean paste, oyster sauce, white wine, light soy, honey.
Sous vide (65°C/2hrs) + air fryer finish = Italians at my table saying, "What IS this magic Asian dish?!"
