Method

Let’s begin by making a quick sugar syrup. Boil water and add sugar. Let it boil until the sugar dissolves completely. Then, add cumin powder, black salt, and Kashmiri red chili powder. Mix well and boil for a few seconds before removing it from the heat.

In a hot kadai, pour in some ghee. Add cumin seeds, poppy seeds, finely chopped cashew nuts, chopped ginger, and green chilies. Sauté for a few seconds until fragrant.

Next, add turmeric powder, coriander powder, salt, Kashmiri red chili powder, and cumin powder. Stir well to combine.

Add fully ripe, chopped tomatoes, and mix everything together. Pour in a little water and cook until the tomatoes become soft and pulpy.

Once cooked, add slightly mashed, cooked potatoes and mix well. Add garam masala powder, amchur powder, and chaat masala powder. Stir everything, cover, and cook for 5 minutes.

Finish with freshly chopped coriander and a squeeze of lemon juice for that fresh kick.

For plating, spread the tamatar base on a serving plate, drizzle with ghee, tamarind chutney, and spicy-sweet syrup. Top with chopped onions, your favorite namkeen, and fresh coriander.
