Learn how to make authentic Chinese Fried Rice at home - fluffy jasmine rice, tender chicken, colourful vegetables, and golden egg all tossed in a hot wok with soy sauce, oyster sauce, and sesame oil. A classic restaurant-style recipe, made simple!
🍚 Ingredients (Serves 4)
• 500g cooked jasmine rice (day-old preferred)
• 3 tbsp vegetable or sunflower oil
• 3 large eggs, beaten with pinch of salt
• 2 medium carrots, diced small
• 1 cup frozen peas
• 4 spring onions (whites and greens separated)
• 3 cloves garlic, finely minced
• 1 thumb-sized piece fresh ginger, minced
• 200g cooked chicken breast, diced (or prawns / beef / vegetarian option)
• 3 tbsp light soy sauce
• 1 tbsp dark soy sauce
• 1 tbsp oyster sauce (halal-certified if needed)
• 1 tsp sesame oil
• Pinch of white pepper
🔥 Method
1. Use day-old rice for best texture. If fresh, cook and chill for at least 2 hours.
2. Heat wok until very hot. Add 1 tbsp oil, scramble eggs until just set. Remove and set aside.
3. Add more oil. Fry garlic, ginger, and spring onion whites for 20 seconds.
4. Stir-fry carrots until softened, add peas, then chicken. Cook 2 mins.
5. Add rice, spread across wok, let toast for a few seconds before tossing.
6. Season with soy sauces, oyster sauce, white pepper. Add eggs back in, breaking into small pieces.
7. Finish with sesame oil and spring onion greens.
8. Serve hot, straight from wok to bowl.
