We trace how industrialization made sugar so cheap and so invisible that it quietly infiltrated the entire food supply. And we uncover the deliberate campaign — run by the Sugar Research Foundation in the 1960s — that paid Harvard scientists to clear sugar's name and blame fat for heart disease instead, shaping public health guidelines for decades while the evidence of sugar's danger sat buried in a Colorado archive.
