⭕ Air Fryer Fried Rice
2-3 cups white cooked rice
1/4 cup chopped green onions
2 eggs, scrambled
1 cup cooked chicken, diced
frozen mixed veggies (carrots, green beans, corn, peas)
sesame seed oil (splash)
coconut aminos or soy sauce (splash)
1/2 tablespoon minced garlic
Stir and cook at 350˚F/175˚C for 8 minutes (stir halfway)

⭕ Air Fryer Foldover Tortillas
0.5 lb ground beef
0.5 tsp chili powder
0.5 tsp cumin
0.5 tsp smoked paprika
4 large flour tortillas
0.25 cup shredded queso cheese
0.25 cup pico de gallo
0.13 cup Sour cream

Brown the ground beef. Stir in chili powder, cumin, and paprika.
Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
Add a couple spoonfuls of the taco meat into one section, cheese to another, sour cream to the next, and finally pico de gallo to the last section.
Starting with the bottom left quadrant, fold the tortilla up and over the top left, then the top right, then the bottom right. Lightly spray with oil
Air Fry 380˚F/193˚C for 4-5 min flipping halfway

⭕ Hibachi Chicken with Yum Yum Sauce
2 raw chicken breast cut into bite sized pieces
1 small onion cut into slices
8 oz of mushrooms cut into fourths
2 small zucchini cut into bite sized pieces
1/2 tsp of ground ginger
1/4 tsp of black pepper
1 TBS of garlic powder
1/4 cup of soy sauce
2 tablespoons of olive oil

Cut up chicken and vegetables & Toss with 2 TBSP of olive oil and seasoning mix
Place the chicken, vegetables and seasoning into preheated air fryer
Air fry at 380˚F/193˚C degrees for 12-15 minutes or until chicken reaches 165˚F/74˚C (stir half way thru cooking)

Yum Yum Sauce - combine:
1 cup mayonnaise
1/4 cup of Water
1 teaspoon tomato paste (or ketchup)
1 tablespoon melted butter
1/2 teaspoon garlic powder
1 teaspoon sugar
1/4 teaspoon paprika
