🌿 Healthy Sweet BBQ Baked Meatballs
Inspired by Sweet Baby Ray's BBQ Sauce
🔸 Homemade Healthy BBQ Sauce:
In a saucepan, combine:
1¼ cups ketchup (or blended tomatoes)
1 cup honey or date honey
¼ cup water
2 tbsp vinegar
2 tsp smoked paprika
2½ tsp mustard
½ tsp garlic powder
¼–½ tsp cayenne pepper (optional)
1 tsp soy sauce
1½ tsp kosher salt
1 tsp black pepper
Simmer on low for 10–15 min, stirring occasionally, until thickened. Set aside.
🌿 Easy Baked Meatballs (Budget-Friendly):
Blend together in a food processor:
2 cooked potatoes
1 big onion
1 cup parsley (or 2 tbsp dried)
In a bowl, mix the veggie blend with:
1 lb ground meat
1 tbsp garlic powder
1 tbsp paprika
½ tsp salt
⅓ tsp black pepper
1 cup flour (chickpea flour works great)
Form meatballs and bake at 400°F / 200°C for about 25–30 min, until golden.

🍦 Easy, Healthy All-Natural Ice Cream
Ingredients:
1 can coconut cream
5–7 dates (adjust to taste)
1½ tsp coffee grounds or instant coffee
¼ cup chocolate chips
Instructions:
Freeze coconut cream in ice cube trays or a ziplock bag.
Once frozen, blend with dates in a food processor or high-speed blender.
Add coffee and chocolate chips, blend until smooth or until chips reach your preferred size.
Tip: Double the recipe for a bigger batch!
