Iced "Peppernuts" Like My Mom Used to Make - Delicious German Spice Cookies

If you fondly remember a royal-icing covered warmly spiced cookie from childhood Christmases, here's the recipe! I can't imagine a Christmas without these! Also SORRY, I completely forgot to cut one open so you can see the inside, but imagine a soft, chewy, cakey, spiced cookie covered in a smooth coating of cardamom and anise-flavored magical royal icing.
Recipe here:
COOKIES: (makes 8-9 dozen)
1-1/2 cups honey
1/4 cup unsalted butter
1 egg, beaten
4 cups sifted flour
1 ts baking soda
1 ts salt
1 ts baking powder
1 ts nutmeg
1 ts allspice
1 ts black pepper
3/4 ts cardamom
1/4 ts aniseed (I crush it finely with a mortar and pestle)
Heat honey in a large saucepan, do not boil. Remove from heat, add butter, stir until melted, and let stand until cool. Beat in egg. Sift together dry ingredients. Stir into honey mixture, mix well. Let rest at room temp for 30 minutes. Preheat oven to 350F.
Shape dough into 1" balls, or slightly flattened, place on parchment- or silicone- lined baking sheets. Bake 11-15 minutes or until golden brown. Place a few warm cookies in a bowl of icing (below), stir to coat, remove to a wire rack and let stand until icing hardens. Store airtight. Can be frozen after icing.
ICING:
4 egg whites (OR SUBSTITUTE 4 Tb meringue powder + 6-2/3 Tb water, or as directed on package)
2 Tb honey
1 ts aniseed, crushed
1/2 ts cardamom
4 cups sifted powdered sugar
Blend egg whites (or substitute), honey and spices in a bowl, add sugar gradually, beating until creamy.
