🧈 Butter Chakli (Crispy & Buttery)
Ingredients
• 1/2cup rice flour
• 1 tbsp besan (gram flour)
• 1 tbsp cornflour
• 1 tbsp butter (soft, not melted)
• 1/4 tsp cumin seeds (or ajwain)
• 1/4 tsp red chilli powder
• Salt to taste
• 1/4 cup +1+1/2 tbsp hot water (approx)
• Oil for frying
Method
• Take rice flour, besan, cornflour, salt, chilli powder & cumin seeds in a bowl.
• Add butter and rub it well into the flour till it feels crumbly.
• Add hot water little by little and make a soft, smooth dough (not tight).
• Fill dough in chakli press.
• Pipe spirals on parchment paper or directly over oil.
• Fry on low–medium flame till golden and crisp.
• Cool completely, then store in an airtight jar.
Tips for perfect butter chakli 👌
• Dough too hard → chakli will break
• Dough too soft → shape won’t hold
• Butter gives flavour + crispness, don’t reduce too much
• Fry slow for that market-style crunch
