Crispy Chicken Lollipops (Drums of Heaven!)

Ingredients:
Chicken wings (about 10-12 pieces)
1/4 teaspoon tablespoon soy sauce
1.5 teaspoons white vinegar
1 teaspoon red chili sauce
2 teaspoons chopped ginger and garlic
1/3 teaspoon chopped green chilli
1/2 teaspoon Schezwan sauce
1/3 teaspoon white pepper powder
1/2 beaten eggs
1/2 teaspoon salt
1 tablespoon cornflour
2 tablespoons all-purpose flour
1teaspoons Kashmiri chili paste
Oil for deep frying
Instructions:
Prep the chicken:
Wash and pat the chicken wings dry. You need to hold the Drumettes and Wingettes part and bend at their joint and push upward the bone. A single bone will come out by piercing the skin of the wing.
Now cut the joint part of Drumette and Wingette. Then hold the Drumette part and push the meat downwards to give lollipop shape.
Using a sharp knife, cut through the meaty part of the wing, leaving the bone exposed. Gently push the meat down the bone to create a lollipop shape. Discard the wing tips if desired.
Marinate the chicken:
In a large bowl, add the chicken lollipops and combine the chopped ginger-garlic green chilli, white pepper powder, beaten eggs and salt. Now mix the chicken lollipops and toss to coat evenly. Marinate for at least 30 minute
After that add red chilli sauce, Schezwan sauce, tomato sauce (optional), soya sauce and vinegar. Give everything a good mix. Then add the all purpose flour and corn flour and give a nice final mix so that all parts of the chicken lollipops are well coated with the batter mixture. Keep them marinated for 1-2 hours or overnight for better results.
Frying the chicken lollipops
Heat the oil: Heat oil in a deep fryer or large pot to 175°C (350°F). when the oil become hot lower the gas flame to low and Carefully drop the lollipops into the hot oil, being careful not to overcrowd the pot. Fry for 8-10 minutes, or until golden brown and cooked through. Keep the gas flame to low while frying, this will help to make the chicken lollipops crisp and well cooked.
Drain and serve:
Drain the lollipops on paper towels and serve immediately with your favorite dipping sauce, such as sweet and sour sauce, chili sauce, or mayonnaise or Schezwan sauce.
Tips:
You can also bake the chicken lollipops instead of frying them. Preheat your oven to 200°C (400°F) and bake for 20-25 minutes, or until cooked through.
