Today's Recipes:

Lemon Ricotta Pancakes
1 ½ cups all purpose flour
1 Tbs baking powder
3 Tbs granulated white sugar
½ tsp salt
1 cup milk
1/2 cup ricotta cheese
2 eggs
1 tsp vanilla extract
2 Tbs fresh lemon juice
1 Tbs fresh lemon zest

Caprese Quiche
1/3 cup chopped shallot
8 ounces cubed mozzarella cheese
4 ounces shredded Parmesan cheese
5 1/4 inch slices, tomato
6 large eggs
1/4 cup heavy cream
1/4 cup milk
Salt and Pepper to taste
1/4 cup loosely packed chopped or julienned fresh basil

350 for 40 minutes

Fruit Tarts with Granola Crust
1 ½ cups old fashioned oats
1 cup walnuts finely chopped
1 tablespoon sesame seeds
5 tablespoons coconut oil melted
¼ cup honey
1 teaspoon vanilla extract
½ teaspoon cinnamon ground
4 oz cream cheese
1 cup greek yogurt
4 cups mixed fruit

325 for 15 minutes

3 Cheese Zucchini Galette
Pastry Dough
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup Butter
1/4 cup sour cream
2 teaspoons fresh lemon juice
1/4 cup cold water
Filling
2 small zucchinis,, sliced into 1/4 inch thick rounds
1/2 tsp garlic powder
1/2 cup ricotta cheese
1/2 cup (about 1 ounce) grated Parmesan cheese
1/4 cup (1 ounce) shredded mozzarella
1 tablespoon slivered basil leaves

Bake at 400 for 35 minutes

Summer Fruit Bread Casserole
1 loaf french bread
4 ounces cream cheese cold
10 ounces chopped strawberries
4 ounces whole raspberries
8 eggs
1 1/2 cups whole milk
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup unsalted butter, melted

Bake at 350 for 1 hour

Strawberry Lemon Dutch Baby
4 tbsp butter melted in pan

1/2 cup granulated sugar
zest of one lemon

2 cups strawberries, sliced
juice of half of lemon

1 cup milk
1 cup flour
6 eggs
1 tsp vanilla

Bake at 400 for 20 minutes
