FOR THE ROASTED SQUASH
▢4 cups butternut squash cubed, approx. 1 medium squash
▢1 small yellow onion sliced
▢6 cloves garlic peeled
▢2 tablespoons olive oil
▢salt & pepper
▢5 sprigs fresh thyme
FOR THE SAUCE
▢4 ounces vegan feta I got mine at Trader Joe's
▢4 ounces vegan parmesan I got mine at Trader Joe's
▢4 ounces vegan cream cheese I used Kite Hill
▢1 teaspoon garlic powder
▢1 teaspoon mustard powder
▢1 teaspoon smoked paprika
▢1/2 teaspoon pepper
FOR THE MAC & CHEESE
▢4 cups broth I used vegan chicken broth
▢3/4 pound short pasta I used cavatappi
▢fresh sage optional, for garnish
