Kitchen organizing and re-arranging is something I enjoy doing a lot and that is what I have shown in this video alongside making trendy and summer meals for the day. These vegetarian recipes are not only delicious but easy to make. I've added a nice Mango flower garnish on the yogurt recipe and make a tasty Chutney as well. Some useful kitchen and home items are a part of the video that I also use to decorate the dining table with.

Mix Veg Recipe - Add 2 table spoon mustard & poppy seeds paste ( Mix black mustard, white mustard & poppy seeds in equal portion), 1 tsp ginger paste, 1 tsp jeera powder, mix 1 tsp of maida with 1 cup of milk, salt & sugar to taste

Chop veggies and lightly saute potatoes, eggplant separately. To oil add panch phoron mix, whole red chillies and all of the veggies. Cook for a while. Then add ginger paste, mustard paste made above, salt, sugar and cumin powder. Add milk+flour solution, cover and cook till the veggies are done but not over cooked - they should maintain their shape.

While serving add garam masala made immediately - 7g cardamoms while, 2g cloves whole & 2g cinnamon whole. Drizzle a dollop of ghee while its hot.

Panch Phoron 5 Spice Mix - 2 tbsps each of Cumin seeds, Nigella seeds(kalonji), Mustard seeds, fennel seeds(saunf) & 1tbsp Fenugreek seeds.
Use about 1 tsp of this in tomato chutney and 2 tsp in Mix veg (or more depending on the qty of overall dish)

Tomato Chutney Recipe - Big chunks of tomatoes about 2 big, Dates seedless chopped as per wish 7 to 8 or more if you like, panch phoron mix added to mustard oil along with whole red chillies, asafoetida/hing, red chilli powder. Cook everything well along with little salt and sugar. Store in fridge for 2-3 days. Keep the consistency as per your choice.

Mango yogurt Recipe - Hung yogurt (keep yogurt in a sieve in the fridge over night to strain all water), Mango puree, powdered sugar, cardamom powder, kesar/saffron(optional)
