Chicken Fricassée Recipe:
Ingredients
-1 whole chicken (about 1.5-2 kg/3-4 lbs), cut into 6 pieces: 2 drumsticks, 2 thighs, 2 breasts.
-Salt and black pepper.
4 tbsp unsalted butter (60 grams).
-300g mushrooms, halved.
-2 medium onions, sliced.
-2 garlic cloves, minced.
-1 bay leaf.
-3 thyme sprigs.
-30g flour.
-125ml water.
-750ml chicken, vegetable stock or just water.
-2x Vegetable stock cubes if only water used.
-185ml double cream (heavy cream).
-2 tbsp parsley, chopped.
-2 tbsp apple cider vinegar (15-30 ml).
How to Make Classic French Chicken Fricassée Stew:
Prepare the Chicken
Cut the whole chicken into 8 pieces: 2 drumsticks, 2 thighs, 2 breasts, and 2 wings. Keep the skin on and the bones in for added flavour.
Season the chicken pieces generously with salt and pepper.
Brown the Chicken
In a large skillet or oven-safe casserole, melt the butter over medium-high heat.
Brown the chicken pieces on all sides, working in batches if necessary to avoid overcrowding. Set aside the chicken pieces on a plate (4-5 minutes each side, totalling 8-10 minutes per piece).
Cook the Vegetables
In the same skillet, add the mushrooms, onions, and garlic. Stir and cook for about 5-7 minutes until the vegetables are softened.
Add Flour, Stock, and Vinegar
Sprinkle in the flour and stir for 1 minute.
Gradually pour in the water, chicken stock, and apple cider vinegar, scraping the bottom of the skillet to release any brown bits for extra flavour.
Simmer with the Chicken
Return the browned chicken pieces to the skillet, ensuring they are nestled into the sauce.
Cover and simmer on medium-low heat for 10 minutes, then uncover and continue to simmer for an additional 20 minutes, or until the chicken is cooked through and tender.
Finish with Cream
Stir in the heavy cream and continue to cook uncovered for 5-10 minutes until the sauce thickens. Taste and adjust seasoning with more salt if needed.
Serve
Sprinkle with chopped parsley before serving.
Serve over mashed potatoes, rice, or pasta or just enjoy on its own with some rustic bread.
