Asparagus is a highlight on our menu plan every year. We wanted to make a special kind of casserole.
Since the weather was nice and it was only supposed to be for 2 people, we came up with the idea of using the great pto 30 potato roaster from Petromax, a small Dutch Oven for potatoes with an ingenious closure.
Yes, you can use the potato roaster for other things too!
For two people, the volume was ideal for us. Mmmm, there is supposed to be a bigger one from Petromax now - let's see ...
If you want to make more, you can also use a normal Dutch oven, preferably a rectangular one, so that the asparagus can stay in sticks. If you want to save money, you can also use broken asparagus, no difference in taste - only in appearance!
If you don't like working with coal, you can also work in a closed grill. And nothing stands in the way of using a casserole dish in the oven at home. This way, larger quantities for parties and celebrations are also possible. If you want to play it safe, you can also use pre-cooked potatoes.
We need:
Asparagus,
Sauce Béarnaise (or Hollandaise),
onions,
potatoes,
pork tenderloin 12-15 cm long,
bacon slices,
bacon or ham cubes
Dutch Oven (e.g. Petromax pto 30)
or ovenproof pot for use in the grill or oven
Recipe:
Peel the asparagus, potatoes and onions. (Green asparagus is usually peeled only in the lower third).
Cut the potatoes and onions into slices approx. 5 mm thick, cut the fillet into 3-4 cm thick slices.
Place 1-2 slices of bacon on the bottom of the pto 30 to prevent burning and to improve the taste.
Then place some bacon or ham cubes on top for the tasty sauce.
Put the onion slices on top, salt, pepper and spread with Béarnaise sauce.
Then come a layer of potato slices, again salt, pepper and spread with Béarnaise sauce.
On top comes the asparagus. Spread the asparagus again with Béarnaise sauce. Be careful not to fill it to the brim, otherwise the pot will overflow when it heats up!
Wrap the pork fillet pieces with slices of bacon and place on top of the asparagus.
Light the barbecue briquettes or preheat the oven.
Position the potato roaster and place glowing briquettes underneath.
Place the briquettes on the Dutch Oven for top heat.
Keep checking with a knife whether the potatoes are soft.
Check from time to time whether the desired core temperature has been reached. If it is almost reached before the potatoes are done, reduce the top heat - remove the charcoal from the top.
Then serve and enjoy.
