Danamethi ka achar.

Dana Fenugreek pickle is very beneficial for health. Constipation is not caused by eating fenugreek seeds. The hair is very shiny, and the stomach remains clean.

INGREDIENTS

1 cup of fenugreek seeds (दाना मेथी)।
1½ cup of mustard oil (सरसों का तेल)।
1 spoon cumin seeds (जीरा)।
½ cup coarsely grounded yellow mustard seeds (दरदरी कुटी हुई पीली सरसों)।
¼ serving spoon Nigella seeds (कलौंजी)।
½ serving spoon salt (नमक)।
½ serving spoon coarsely grounded red chillies (दरदरी कुटी हुई लाल मिर्च)।
½ serving spoon kashmiri chilli powder (कश्मीरी मिर्च पाउडर)।
½ serving spoon turmeric powder(हल्दी पाउडर)।
½ serving spoon coarsely grounded fennel seeds(दरदरी कुटी हुई सौंफ)।
Lukewarm water for soaking (गुनगुना पानी भिगाने के लिए)।

METHOD-

Soak fenugreek seeds in lukewarm water for 7 to 8 hours.
Spread the soaked fenugreek seeds on a cloth and dry it in the sun for 3 hours.
Roast the fenugreek seeds on low flame for 5 minutes while stirring continuously.
Heat some oil, add cumin seeds, and then let it cool.
Put the roasted fenugreek seeds and all the spices in the cooled oil.
Cover the pickle with a plate and keep it for 1 day.
Fill the pickle in a glass or ceramic jar. Add oil as required. Dana Fenugreek pickle is ready.

Note - Some important things related to pickles.

1- Pickle should always be kept submerged in oil.

2- It is necessary to keep it in the sun for a day

3- Cumin should be put in lukewarm oil. Otherwise, the cumin will burn.

4- While pouring the pickle, the pickle pot and hands should be clean and dry.

5- Spices are completely dry and do not contain moisture.

6- Fenugreek seeds should be kept in the sun for 3 hours during summer and 6 to 8 hours in the shade or fan air during the rainy season.

7- After adding the pickle, keep it for a day in the same vessel in which the pickle is poured.

8- If all these things are kept in mind while adding the pickle, then the pickle remains safe for a long time.
