When Aleksander and Tobias (from EtOH) called me to tell me about their process for rapidly aging whisky in just 12 days, I had to know more.
This is not just putting spirit and chips into an ultrasonic cleaner and expecting to get a well rounded liquid. This is trying to replicate the chemical processes that occur within a cask over years of storage in just a few days.
