Do you remember the Katla or Rui cooked in a white gravy in a Bengali Wedding? 🫠
This Fish Rezala is the closest you can get! 😍
For making it you will need-
Katla / Rui Fish - 4 pcs - 350 gms
For marination m: 1/2 tsp salt, 1 tsp ginger garlic paste and 1 tsp lemon juice
1/8th cup oil for frying and cooking
For the gravy: 2 onions - cut in chunks , 1 inch ginger , 7-8 garlic cloves , 3 green chillis , 3 tbsp cashews, 2 tbsp pumpkin seeds and 1 tbsp raisins
1 tsp salt
2 cups of warm water
3 tbsp whisked curd
Spices - 1.5 tbsp coriander powder , 1 tsp cumin powder
For garnish: 1 tbsp brown ghee , 1/4th tsp kewra water and 1/2 tsp garam masala
Cooking:
Marinate and rest the fish for 30 min
Heat oil for cooking
Fry the fish without overcrowding the pan for 3-4 min on each side on medium flame
Set the fish aside and remove the excess oil
Add onions and saute for 1 min
Toss in ginger garlic and green chillis and saute for 2 min
Add cashew , Pumpkin seeds and raisins and cook for 2 more min
Simmer with water till it is reduce
Cool to room temperature and make a fine paste
Heat the remaining oil and temper the whole spices for 30 seconds
Add the paste and cook for 5 min
Add the spices and cook for 5 more min
Add whisked curd and when oil separates
add a cup of water
Once it starts to simmer, add fish pieces.
Cover and cook for 8-10 min
finish with garam masala , brown ghee and kewra water
