It is difficult to write an exact recipe for kefir making, because the temperature is an important factor. Ideally 16-20°C (= 60-68°F). When you don't want to make kefir for a while, you can keep them safely in the fridge for about 2 weeks. The fermentation will still happen but slower.

I weighed the kefir grains: 125g
They produce about 450-500ml of kefir per day.
It is still cold in the UK now, the temperature in my kitchen is about 17-18°C
The kefir is ready to be drained after 16-24 hours in winter conditions above, but be ready to wait even longer if the temperature is lower. Check and adjust with your specific conditions 😊
