Protein Brownies
Ingredients:
• 40g Oat flour (blended oats)
• 245g Pumpkin Puree
• 60g Chocolate Protein Powder (Whey/Casein Blend, or Whey)
o Whey/Casein provides a more dense and better tasting brownie.
• 50g Unsweetened Cocoa Powder
• 40g Peanut Butter Powder
o Or you can use 80g Creamy Peanut Butter and skip the light butter.
If you do this, make sure the peanut butter is runny – you can microwave for ~15sec and stir if not already runny.
• 28g Light Butter
• 45g Sugar Free Maple Syrup
• 10g Stevia (used granulated form)
• 2 eggs
• 15g Chocolate Chips (Mini Semi-Sweet) – add on the end.
• Pinch of Salt
Instructions:
1. Combine all dry ingredients in a big bowl and mix – including: oat flour, protein powder, cocoa powder, peanut butter powder, stevia, and salt. Save chocolate chips to add on top of the brownie at the end.
2. Then add all the wet ingredients into the bowl and mix. This includes: pumpkin puree, light butter (softened/melted), sugar free maple syrup, and eggs.
3. Grab a brownie pan (8x8” or 9x9”), and line with parchment paper. Spray the parchment paper with non-stick spray.
4. Pour brownie mixture into pan. Then add the chocolate chips to the top.
5. Bake in the oven at 375F for 30-35min, or until set.
a. If you like a fudgy, softer brownie – insert a toothpick or butter knife into the center and you will want the inside to have a little bit of brownie on the utensil.
6. Remove from oven and let cool for about 15min.
7. Enjoy!
a. Store in fridge if you like them cold!

130 calories, 11g protein, 5g fat, 15g carb, 3g fiber
Macros for entire pan of brownies:
1140 calories, 96g protein, 39g fat, 135g carb, 27g fiber
