Dough
• 2 cups (≈240 g) all-purpose flour
• 2/3 cup warm water (156–161 g, ≈38–40 °C)
• 1 tsp yeast (3.5 g)
• 2 tsp sugar (8 g)
• 1.25 tsp salt (7 g)
• 1.5 tbsp olive oil (21 g)
Chicken & Toppings
• 200–250 g chicken breast/thigh, bite-size
• 1–2 tsp olive oil (for cooking)
• Spice mix: 1 tsp each onion powder, black pepper, garlic powder, oregano, paprika, cayenne
• 1 cup pizza sauce
• 200–250 g mozzarella cheese, shredded
• 1 medium onion, thinly sliced
• 1 small capsicum, thinly sliced
• Olive oil for brushing crust
Ranch Sauce
• 4 tbsp mayonnaise
• 4 tbsp Greek yogurt
• 2 tbsp lemon juice
• 1 garlic clove, minced
• Salt & black pepper, to taste
• Fresh or dried dill (optional)
Instructions
1. Activate Yeast – Mix warm water, sugar & oil. Sprinkle yeast and let bloom 5–10 min until foamy and bubbly.
2. Mix Dough – Add flour and salt, stir until shaggy. Rest 15–20 min.
3. Knead – Slap & fold (or stand mixer) 7–10 min until smooth and elastic.
4. Rise – Place in oiled bowl, cover, let double (≈1–1.5 hr). Optional: refrigerate overnight for extra flavor & airiness.
5. Cook Chicken – Sauté chicken with olive oil & spice mix until golden and cooked through.
6. Shape divide into 2 balls. Stretch by hand (no rolling pin). Stretch very thin without pressing too much on the edges. Place on parchment paper.
7. Assemble – Spread sauce → cheese → chicken → onion & capsicum. Brush edges with oil + a bit of sauce.
8. Bake – Preheat oven to 250 C C with tray inside. Slide pizza onto hot tray and bake 10–12 min until crust golden and cheese bubbly.
