Warm up on cold days with the rich, savory flavor of Tantanmen at home by making this simple recipe with udon noodles. 😋🍜
Ingredients for 1 Person
Udon 100g
For miso-seasoned minced meat topping:
Minced pork or your choice of minced meat 150g
Garlic 1 clove
Ginger 1 thumb-sized piece
Sake 15g
Miso 18g
Granulated sugar 5g
Chili been paste 1 TL (optional)**
For soup:
Soy milk 300g
Chicken stock powder 8g
Soy sauce 24g
Rice vinegar 2g
Tahini 30g
Chili oil 8g (optional)**
Other toppings (optional):
Pak choi, boiled or fried 1/2
Leeks for garnish
Sesame for garnish
Miso is a traditional Japanese thick paste seasoning produced by fermenting soybeans with salt and kōji, and sometimes rice, barley, seaweed, or other ingredients. It is available at larger Swiss supermarkets and at Asian groceries stores.
** If you like spicy food, add more to your liking.
Instructions
1. First, make miso-seasoned minced meat topping. Mix meat and grated ginger and garlic thoroughly.
2. Thoroughly mix miso, granulated sugar and sake.
3. Heat oil in a frying pan and stir-fry the meat.
4. Once cooked through, add (3) the miso seasoning.
5. Optional: add chili bean paste and mix well.
6. Once thoroughly mixed, remove from the heat.
7. Next, make soup. Mix well tahini and chili oil.
8. Once mixed thoroughly, add chicken stock powder, rice vinegar and soy sauce , then mix well.
9. First add a small amount of soya milk to (10) and dissolve it, then add the remaining soya milk and mix well.
10. Place the soup over the heat and warm it through. Take care not to boil it too vigorously.
11. Boil the Udon according to the instructions on the package.
12. Once cooked, rinse under cold water.
13. Place the noodles in the bowl, pour the soup, and top with the miso-seasoned minced meat and your choice of vegetables.
