My wife and I recently went to Japan with a group of students, other instructors, alumni, friends, and family. During our trip we took a sushi-making class in Tokyo (with Buddha Bellies sushi school).
We learned to make both maki and nigiri sushi. And then we got to enjoy the fruits of our labor! Everyone did a great job, and it was a lot of fun.
I have included the rice recipe that they gave us with the class. Just make sure you start with sushi-grade fish from a reputable source (typically frozen to kill parasites).
