Methi Matar Malai Recipe
Ingredients
Fresh methi (fenugreek leaves) – finely chopped
Green peas (matar) – 1 cup
Oil – 2 tbsp
Butter – 1 tbsp
Onions – chopped
Ginger–garlic – finely chopped or paste
Green chillies – 3–4
Cashews – a handful
Tomatoes – 3
Hing (asafoetida) – a pinch
Jeera (cumin seeds) – 1 tsp
Red chilli powder – 1 tbsp
Coriander powder – 1 tbsp
Garam masala – 1 tbsp
Turmeric powder – ½ tsp
Salt – to taste
Fresh cream / malai – as required
Water – as needed
Method:
Prepare the Base
Heat oil in a pan.
Add chopped onions and sauté until translucent.
Add ginger, garlic, and green chillies; sauté well.
Add cashews and cook for a minute.
Cook Tomatoes
Add chopped tomatoes and salt to taste.
Add a little water and cook until tomatoes soften completely.
Switch off the heat, let it cool, then grind into a smooth paste.
Make the Gravy
Heat butter in a pan.
Add hing and jeera; let them crackle.
Add chopped methi and sauté until the raw smell disappears.
Add green peas and cook for 2–3 minutes.
Add Paste & Spices
Add the prepared tomato–cashew paste.
Add red chilli powder, coriander powder, garam masala, and turmeric powder.
Mix well and cook until oil starts separating.
Finish with Malai
Adjust salt if needed.
Add fresh cream/malai and mix gently.
Simmer for 2–3 minutes.
Serve
Serve hot with naan, roti, or jeera rice.
