This easy brussels sprouts recipe is the best way to turn this healthy veggie into a delicious side dish. Brussels Sprouts with Chickpeas makes for a delicious high protein side dish that everyone will love.
It can be enjoyed with rice, pasta, or or simply enjoy them just as they are.
This is one of my personal favorite brussel sprouts recipe. Hope you love them too!


Ingredients for two servings:

• 3 cups (270 g) Brussels sprouts, trimmed and sliced in halve
• 1 cup (170 g) cooked chickpeas (or garbanzo beans)
• 1 yellow onion, finely chopped
• 3 cloves garlic, finely chopped
• 1 vegetable bouillon cube
• 1 tablespoon (30 ml) tomato paste
• 1 teaspoon balsamic vinegar
• 1/4 teaspoon black pepper
• 1/4 teaspoon cumin powder
• 1/4 teaspoon cayenne pepper
• 1/3 cup extra virgin olive oil
• 1 cup (240 ml) hot water
• Salt to taste
