Creamy Garlic Potato Bake
Ingredients
8 cloves garlic, finely grated
75g butter
300ml thickened cream
18 (1.5kg/3.3kg) Blue Royal potatoes*, peeled
4 sprigs rosemary, leaves finely chopped
150g Pecorino cheese, grated
sea salt and pepper to taste
1 cup Red Rock Deli Creamy Garlic Potato Bake chips, crushed
Method
Preheat your oven to 180°C fan forced (356°F).
Combine the garlic, butter and cream in a small saucepan over low heat. Stir until butter melts, but do not allow it to boil. Remove from the heat.
Thinly slice the potatoes using a mandolin. Pat dry with a paper towel or a clean tea towel.
Lightly grease a deep baking dish, approximately 20cm x 20cm. Begin with a layer of potatoes, then add Pecorino cheese, salt, pepper, rosemary, and a drizzle of the garlic butter mixture.
Repeat the layering process until all the potatoes and seasonings are used. Sprinkle over the crushed chips.
Cover the dish with foil and bake in the oven for 1 hour and 20 minutes, or until the potatoes are fully cooked and a knife passes through them easily.
Switch the oven to grill setting. Remove the foil and place the dish under the grill for 10-12 minutes or until it's golden brown.
Let the potato bake rest for 10 minutes before portioning and serving
