Ingredients
For Marination (Minimum 30 mins to 1 hour)
500g Boneless Chicken (thighs preferred), cut into 1-inch pieces
2 tbsp Yogurt / Hung Curd
1 tsp Ginger-Garlic Paste
1 tbsp Kashmiri Red Chilli Powder (for color)
1 tsp Garam Masala
1/4 tsp Turmeric Powder
1/2 tsp Salt
1/2 tbsp Lemon Juice
To make the Makhani Gravy/Masala
Butter
1 tbsp oil
½ tsp jeera
2 onions
small piece of ginger
8 garlic
3 tomatoes
Soaked 7 cashew nuts
½ tbsp Kashmiri red chilli powder
½ tsp garam masala
Kasuri Methi (dried fenugreek leaves)
Fresh cream
1tsp salt.
Instructions
1. Marinate the Chicken
Combine yogurt, ginger-garlic paste, kashmiri chili powder, turmeric, salt, and lemon juice with chicken pieces and refrigerate for at least 30 mins
2. Cook the Chicken
Pan-fry marinated chicken pieces in oil/butter, cook the chicken from medium to high flame stirring continuously until the moisture has dried up,then set aside.
3. Prepare the Gravy Base
Heat oil and add jeera, Sauté onions in oil, add ginger,garlic, tomatoes, cashews, chili powder, garam masala and salt. Cook until tomatoes are soft. Let cool completely.
4. Pure the Gravy
Blend the cooled mixture until smooth, adding water as needed, and strain back into the pan.
5. Assemble the Butter Chicken
Simmer the strained gravy, add cooked chicken, and simmer for 5-7 minutes. Stir in Kasuri Methi, and cream. off the stove
6. Serving
Garnish and serve hot with naan, paratha, or rice.
