• 6 medium potatoes
• 1 medium onion
• 3 eggs

1. Prepare the potatoes:
• Peel and grate the potatoes on the fine side of a grater (or use a food processor).
• Squeeze out excess liquid slightly (don’t remove all, a little starch helps bind).
2. Grate the onion:
• Grate or finely chop the onion and mix with potatoes (this prevents potatoes from turning brown).
3. Make the batter:
• Add egg, flour, salt, and pepper.
• Mix well until the mixture holds together but is not too thick.
4. Fry the deruni:
• Heat oil in a frying pan.
• Spoon portions of batter (about 1–2 tbsp each) and flatten slightly into small pancakes.
• Fry on medium heat until golden brown and crispy on both sides (about 3–4 minutes per side).
5. Serve:
• Place on paper towels to remove extra oil.
• Traditionally served hot with sour cream or sometimes with mushroom sauce.
