Puff Pastry Beurrage:
680g cold butter
125g all-purpose flour
Puff Pastry Detrempe:
500g all-purpose flour
237g cool water
1 tbsp lemon juice
1 tbsp white sugar
2 tsp of salt (if us unsalted butter) or 1 1/2 tsp (if use salted butter)
Filling:
380g ground pork
1 small size white onion - diced
180g pork pate
1/4 tsp black pepper
1 tbsp chicken bouillon powder
1/8 tsp fish sauce
