🥗 Ingredients
Podalankai (Snake Gourd) – 1½ cups (chopped thin)
Coconut – 2 tbsp (freshly grated)
Oil – 2 tsp
Mustard seeds – 1 tsp
Urad dal – 1 tsp
Dry red chili – 2 (broken)
Curry leaves – 1 sprig
Green chili – 1 (optional, slit)
Turmeric powder – ¼ tsp
Salt – to taste
Asafoetida – a pinch
🍳 Instructions
Wash, peel, and deseed the podalankai. Chop into thin half-moons or slices.
Heat oil in a pan. Add mustard seeds and let them splutter.
Add urad dal, dry red chilies, green chili (optional), curry leaves, and a pinch of asafoetida. Sauté till golden.
Add the chopped snake gourd, turmeric powder, and salt.
Cover and cook on low flame for 10–12 minutes or until soft. Stir occasionally.
Once the vegetable is cooked and dry, add grated coconut.
Mix well and turn off the flame. Serve hot as a side with any South Indian meal.
