Guys….this is probably the best thing I’ve ever done…no lie. BOTH RECIPES!!! Do yourself a favor and try it.
400 Method Poor Man’s Prime Rib
4 lb Chuck roast
Bolner’s Fiesta Uncle Chris Seasoning
2 sticks of butter (unsalted)
Minced Garlic (1 TBSP)
Parsley (1 TBSP DRIED)
Butchers twine
-Heat grill for searing while heating smoker to 400
-soften butter enough to mix with a fork
-mix butter with 2 TBSPS of Uncle Chris, parsley, and minced garlic. Set aside for after searing.
-rub chuck with heavy coat of Uncle Chris
-sear all sides of the chuck roast
-tie up with twine and rub with butter mixture
-set on wire rack over a catch pan in the smoker
-smoke at 400°F until internal temperature gets to 85-90°F. Typically around 90 minutes.
-let the smoker cool while the meat continues to cook. Pull the meat at 110°. It will carryover cooking another 15 to 20 degrees and finish around 125-130°
-rest 1-2 hours maintaining internal temp
-slice 1/4” to 3/8” thick and serve
Salsa Quemada
5 Romas
4 jalapeños
2 Red jalapeños
2 Serranos
Minced garlic (2 TBSP)
Salt (1 tsp)
pepper (2 tsp)
Paprika (1 tsp)
-Grill vegetables on high heat until peppers are blackened (about 30 minutes)
-Pan the vegetables and roast at 400 until tomatoes begin to soften under their own weight. (About an hour)
-once vegetables are done, put all ingredients in a blender and run until you like the consistency
