BEEF IGADO (A Filipino Traditional Beef & Beef Liver Stew)

Igado is one of the favorites and traditional dishes that you can find in many Filipino households. From fiesta celebrations to numerous occasions and special days. Here is how you can cook it. You can use other meat aside from beef.
Ingredients:
400 grams of beef from the tenderloin part. Thinly sliced
400 grams of veal beef liver. Thinly slice
A mix of quarter cup soy sauce and a quarter cup vinegar
1 medium potato. Cut into chunks
1 large carrot. Cut into chunks
Half a cup of red bell pepper. Sliced
1 green chili. Sliced
1 large finely chopped onion
6 cloves of finely chopped garlic
For Spices
1 tablespoon paprika
½ teaspoon of sea salt
½ teaspoon ground black pepper
2 Laurel leaves
3 tablespoons of olive oil or any other cooking oil that you have
400 ml water or could be more depending on the tenderness of your meat. It might need a longer time to cook.
How to cook:
In a medium-high heat pot, pour the olive oil, fry, and brown the onion. Once it is getting brown, put the garlic till they caramelize. Now fry the beef for a few minutes and put the liver, stir continuously until the red color on the meat disappears. Now pour the soy sauce and vinegar and continue stirring then add the water. Cover and bring it to boil and then add the spices. Stir, cover and simmer for about 20 minutes or until the meat and liver are tender, you can add more water if required. Once the meat & liver are tender, put the potato and carrots, continue stirring and cover the pot for 10 minutes and add the bell pepper and the chili. Simmer for another 5 minutes. Taste if it needs more salt of pepper. You can lower the heat now until some of the liquid evaporated and the sauce thickens a bit. You can add corn starch as a thickener, but I prefer it without. Turn off the heat and serve.
