Here's an authentic Odia Dalma recipe – a traditional and nutritious lentil-vegetable dish from Odisha, often served with rice and known for its simple, earthy flavors:
Ingredients:
1 cup arhar dal (toor dal/pigeon peas)
1 cup mixed vegetables (raw banana, pumpkin, papaya, potato, brinjal, drumsticks)
1 tsp grated ginger
1–2 dried red chilies
1/2 tsp turmeric powder
Salt to taste
4 cups water
For tempering:
1–2 tbsp ghee or oil
1 tsp panch phoron (a mix of mustard, fennel, fenugreek, cumin, and nigella seeds)
1–2 bay leaves
1 pinch of asafoetida (hing)
Fresh grated coconut (optional, for garnish)
Coriander leaves (for garnish)
Instructions:
Wash and pressure cook the dal with turmeric and a pinch of salt for 2 whistles.
In a pot, boil the chopped vegetables with a little turmeric and salt until soft but not mushy.
Add the cooked dal to the vegetables. Mix well and simmer together for 5–10 minutes.
For tempering, heat ghee/oil in a pan. Add panch phoron, bay leaves, red chilies, and hing.
Once they splutter, pour the tempering over the dal-vegetable mixture.
Mix well and garnish with grated coconut and chopped coriander leaves.
