This Cod Pesto Bake with Vegetables is an easy, one-pan oven meal that delivers fresh, herby flavor with minimal effort. Flaky white fish, roasted vegetables, and pesto come together in a simple build-and-bake recipe that’s perfect for busy weeknights and repeatable wins in the kitchen.
This dish is light but satisfying, flexible with ingredients, and designed to help home cooks build confidence by cooking meals that work more than once.
Ingredients
• 1 red onion, sliced
• 1½ cups cherry tomatoes, halved
• 2 medium zucchinis, halved and sliced into half-moons
• ½ cup pesto (store-bought or homemade)
• ½ cup fresh basil, chopped
• 3 tablespoons capers, drained
• 2 tablespoons olive oil
• 6 cod fillets (about 6 oz each)
• Salt and pepper, to taste
• 1 lemon, cut into wedges
Instructions
1. Preheat the oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
2. In a large bowl, toss zucchini, onion, and tomatoes with olive oil, 2 tablespoons of pesto, salt, and pepper. Stir in the capers.
3. Spread the vegetables evenly in the baking dish.
4. Nestle the cod fillets on top of the vegetables and brush with the remaining pesto.
5. Bake for about 20 minutes, or until the cod is opaque and flakes easily with a fork and the vegetables are tender.
6. Finish with fresh basil and serve with lemon wedges.
Substitutions & Notes
• Swap cod for haddock, halibut, or flounder
• Use broccoli, peppers, or green beans instead of zucchini
• Add red pepper flakes if you like a little heat
