Ingredients
• 1 cup unsalted butter (226 g)
• 1 1/4 cups 70% dark chocolate chips (about 225 g) Or use a mix of semi‑sweet and bittersweet chocolate for a sweeter flavor
• 1 cup granulated sugar (150 g)
• 1/4 cup all‑purpose flour (32 g)
• 2 tablespoons cocoa powder (10–12 g)
• 1/4 teaspoon salt (3 g)
• 1/2 teaspoon instant espresso powder
• 4 large eggs
• 2 egg yolks
• 1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 190°C (375°F).
Grease an 11" × 7" oval baking dish or an 8×8‑inch square dish.
2. Melt the butter and chocolate.
Place the butter and chocolate in a heatproof bowl. Melt over a double boiler or in the microwave in short intervals, stirring until smooth. Let cool slightly.
3. Mix the dry ingredients.
In a separate bowl, whisk together the flour, cocoa powder, espresso powder, and salt.
4. Whip the eggs and sugar.
In a stand mixer or with a hand mixer, beat the eggs, egg yolks, sugar, and vanilla on medium‑high speed for about 2 minutes, until pale, thick, and doubled in volume.
5. Incorporate the melted chocolate mixture.
Gradually pour the melted butter‑chocolate mixture into the whipped eggs. Whisk gently until fully combined.
6. Add the dry ingredients.
Add the flour mixture and whisk lightly or fold with a spatula just until combined. Avoid overmixing to maintain the molten texture.
7. Pour into the baking dish.
Spread the batter evenly in the prepared dish.
8. Bake for 20–25 minutes.
The edges should be set while the center remains soft and jiggly. Remove promptly—overbaking will eliminate the molten center.
9. Serve warm.
Pair with ice cream, whipped cream, powdered sugar, or fresh berries.
