Looking for a recipe that is sure to impress? This classic Italian dish is sure to do the trick!
250g mascarpone cheese
1 cup (240ml) 35% whipping cream
3 tbsp icing sugar
6 egg yolks
3/4 cup (150g) granulated sugar
2 tbsp Amaretto liqueur
1 cup (240ml) strong espresso, cooled
2 tbsp coffee liqueur (such as Kahlua)
24-30 ladyfingers
Cocoa powder and grated dark chocolate for topping
Instructions:
In a stand mixer, beat the mascarpone, whipping cream, and icing sugar until light and fluffy. Refrigerate.
In a heatproof bowl, whisk the egg yolks and granulated sugar. Place over a simmering water bath and whisk until thickened, about 5-7 minutes. Remove from heat, stir in Amaretto.
Gently fold the egg yolk mixture into the mascarpone mixture.
In a shallow dish, combine the espresso and coffee liqueur. Quickly dip the ladyfingers into the mixture, coating both sides.
Layer the soaked ladyfingers in a baking dish. Top with half the mascarpone mixture, then dust with cocoa powder. Repeat layers.
Refrigerate for at least 6 hours, or up to 2 days. Serve chilled, garnished with grated dark chocolate.
