Ingredients
• 1 small red snapper fillet, skinned and deboned
• Salt
• Zest of 1 lemon
• 2 large heirloom tomatoes
• 1 tbsp za’atar spice @aspiceaffair
• 1 tbsp vinegar
• 3 tbsp olive oil + extra for finishing
• ½ cucumber, brunoise
• 2 radishes, brunoise
• 1 red chili, brunoise
• 6 Kalamata olives, halved
• Fresh oregano leaves
• Pita chips (for serving)
Instructions
1️⃣ Cure the fish: Salt the snapper fillet, rub with lemon zest. Let sit 10 min, rinse and pat dry. Slice thinly and keep chilled.
2️⃣ Prepare tomato: Grate and strain tomatoes. Season with za’atar, vinegar, olive oil, and salt.
3️⃣ Prepare brunoise: Mix cucumber, radish, and chili with a bit of tomato water, drizzle of olive oil, and salt.
4️⃣ Assemble: Spread tomato mixture on a cold plate. Arrange snapper slices and brunoise on top. Add olives and oregano. Finish with olive oil and flaky sea salt.
5️⃣ Serve: Accompany with crispy pita chips.
