After 50+ hours of trying to spawn the elusive rainbow, it looks like from the dataset that rainbows only appear between dawn (when the sun first rises) and noon in the game, while noon to dusk only has a chance to spawn Odin's burning statues. This is annoying because meditating only fast forwards time to either noon or midnight. Also loading a save will always start with noon time no matter what in game time that save was made. So the best way that I found was to meditate to midnight and fast forward time manually to when the sun first rises.

Rainbows spawn at the same location as the meteors and Odin's burning statue sites, but I find that the place in Glowecestrescire is a decent place to try because the fast travel point is 1000m to a rainbow/meteor/burning statue spawn site, which means that it only takes 5 runs on mount between the fast travel point and the spawn site before the sun rises from midnight and another 5 runs on mount to try to spawn a rainbow before noon. If you also need resources, the initial 5 runs will not be wasted since this can be doubled as a meteor spawn run.

So the steps are this:

1. Fast travel to the location in Glowecestrescire as shown in the video.
2. Leap of faith down and make a save of the game.
3. Meditate to midnight.
4. Make 5 runs with the mount to the rainbow/meteor/burning statue site as shown in the video, fast traveling back when Eivor reaches the spawn site. The 5th run should be sunrise when Eivor reaches the spawn site.
5. Make 5 more runs with the mount to the rainbow/meteor/burning statue site as shown in the video, where any one of these runs could spawn the rainbow. If a rainbow appears, start looting it with the raven method as shown in the video. What you want to do is look back at the rainbow while flying away from it and watch when the rainbow disappears. That is when you can get out of raven form and reloot the rainbow again. HINT: look in the opposite direction of the rainbow before going into raven form because for some reason if the raven goes through the rainbow, the rainbow could not be seen - a bug probably. If that happens, just exist raven try again.
6. If no rainbows spawn, reload the save and start again from step 3.

Here are some additional information: like the meteor, if you reload the game or travel out of England in this case, then the rainbow will disappear and you will need to go through the process of spawning it again. But unlike meteors, you can fast travel or go anywhere within England to do other stuff, and when you come back the rainbow should still be there.
