🍗 Ingredients
Brining:
3 tsp salt
4 tsp vinegar
3 glasses of water
3 tsp lemon juice
Sliced lemons
2 tsp ginger-garlic paste
Chicken:
Chicken leg/breast pieces (tikka cut & slits)
Spice Mix:
1 tsp black pepper
1 tsp coriander seeds
1 tsp red chilli powder
1 tsp garlic powder
1 tsp white cumin
1 tsp crushed red chilli
1 tsp chaat masala
½ tsp salt or to your taste
3–4 green cardamoms
👩🍳 Method (Step-by-Step)
Step 1 — Brine the chicken:
Mix salt, vinegar, lemon, lemons, water & ginger-garlic paste.
Add chicken & rest 1 hour.
Step 2 — Grind masala:
Blend all spices.
Step 3 — Marinate:
Coat chicken with masala & rest for 30 minutes.
Step 4 — Steam:
Cook chicken on a low flame for 20–25 minutes with the lid sealed.
Step 5 — Grill / Pan Roast:
Char on coal or on the grill over tawa for a smoky flavour.
