Ingredients (2 servings):
• 150 g Greek yogurt (plain, unsweetened)
• 2 eggs
• 1 banana, sliced
• 2 tbsp cornstarch (approx. 15–18 g)
• 1 cup frozen berries (do not thaw) – optional
• ½ tsp vanilla extract or a pinch of cinnamon (optional)
• Pinch of salt (optional, but enhances flavor)
Instructions:
1. Preheat oven to 180°C (350°F).
2. In a bowl, whisk together the Greek yogurt, eggs, vanilla/cinnamon, and salt (if using).
3. Stir in the cornstarch until smooth.
4. Pour into a greased small baking dish.
5. Top with sliced banana and frozen berries.
6. Bake for 25–30 minutes until set and lightly golden around the edges.
Let it cool a few minutes. It will firm up more as it rests.
