Hello my wonderful, fantastic, amazing, beautiful friendos!
We just hit 7k a few weeks ago, and now we're already at 8k!! I am so excited to have so many of you here! I love and appreciate each of you and I hope you know and feel that! To celebrate, I made a samoa cookie pie because I'm obsessed with samoa anything lol but also you guys love cookie pies, so I thought I'd combine the two! I really hope you enjoy as much as I did!

Samoa Cookie Pie Recipe:
-1/2 Cup Vegan Butter (Melted)
-1 Flax Egg (1 tbsp ground flax + 2-3 tbsp water)
-1/2 Cup Brown Sugar (Packed)
-1 Tsp Vanilla
-1 1/4 Cup Flour
-1/4 Tsp Salt
-1 Cup Vegan Chocolate Chips
-1 1/2-2 Cups Shredded Coconut (I used sweetened)
-14 Oz Can Coconut Sweetened Condensed Milk
-1/8-1/4 Cup Vegan Caramel (2-4 tbsp natural peanut butter mixed with 2-4 tbsp maple syrup)
-3/4 Cup Vegan Chocolate Chips (Melted for drizzling)
Preheat oven to 350°F. Mix melted vegan butter with flax egg, brown sugar and vanilla until smooth. Add flour and salt and mix until combined.
Pour into greased/lined 8-9” springform. Bake 10 minutes. (It’s supposed to be undercooked)
Remove from oven and carefully spread 1 cup of chocolate chips over top. Then evenly sprinkle coconut, then drizzle coconut condensed milk, and vegan caramel on top.
Return to oven to bake for 20 minutes. Drizzle melted chocolate overtop. Let set for at least 4 hours. I do overnight and it’s still so gooey! Enjoy!
