Make your special day even more special .. let's make WATALAPPAM DESSERT ... Srilankan watalappam is a delicious dessert that's like a creamy coconut custard.. What makes this dessert so special is the use of Coconut milk from freshly grated coconut & special palm jaggery or கருப்பட்டி..
This dessert is a great treat for evening with a cup of black ginger tea.
It's also popular during weddings, religious festivals , Other social functions & celebrations ..
For muslims eid dessert platter is not complete without WATALAPPAM..

INGREDIENTS:
Palm jaggery (கருப்பட்டி) - 500g
Eggs - 10
Thick coconut milk - 1 & 1/2 cups
Cardamom - 10 - 12
Cinnamon stick - 1
Vanilla essence - 1 tsp
Sugar - 2 tbsps for caramelize
Water - 4 tbsps
Cashews & raisins for garnishing

Cooking process :
1. steaming

FOR STEAMING :
Boil some water in a large pot.
Place a stand in to the boiling water.
Place the watalappam dish over the stand.
Make sure quarter of the dish submerged in water .
Cover & seal the lid.
Steam for 30 minutes.
(it's depending on the dish you have used the timewill be 30 - 45 minutes)
FOR BAKING :
Preheat the oven for 170 degree Celsius / 385 degree Fahrenheit
Cover the watalappam dish with foil.
Place it in a baking tray.
Pour some hot water on the tray.
Bake for 60 minutes.
You can make the dessert in a large dish or individual servings & the process is same..

Preparing time : 45 - 60 minutes ( steaming time 30-45 minutes)
servings : 12 - 15
serve as hot or as well as cool..
WATALAPPAM tastes even better when it has sit in the refrigerator overnight .
